Our Simmer Sauces help in gentler treatment of food than boiling to prevent it from toughening and/or breaking up.  This way of reduction cooking/simmering thickens and intensifies the flavor of the food being prepared.  Usually done without a lid, simmering enables the vapor to escape from the mixture. Different components of the liquid evaporate at different temperatures which concentrates the flavors left in the pan.

We, like other companies, have a method for making our hot sauces unique. The process generally starts with procuring fresh chilli peppers and other condiments and making them into a paste, which at times is fermented for a few days or even months. The paste is then mixed with other ingredients like vinegar. Besides acting as a natural preservative, vinegar lends its own flavor to the hot sauces. When required by our bulk buyers, we also add garlic, spice blends, vegetables and more to give our sauces a unique flavor and bite. We make our hot sauces with chillies like Bhut Jalokia, Guntur Chilli, Habenero, Cayenne pepper, Jalapeño, Chipotle etc. Our sauces come with different levels of hotness – ‘Oh, Wow!’ to ‘Oh, my God! Why did I have this?’ As you might already be aware, the Scoville scale is used to measure the hotness of the sauce. The higher the Scoville units, the hotter are our sauces. For, example, hot sauces made using Guntur Chilli have Scoville units of about 40,000 while those made using Bhut Jalokia or Naga Pepper will have Scoville units of 0.8-2 m.
